For many folks in the past, pie was the only dessert worth mentioning.
Maybe it simply was tradition, maybe it became tradition because the ingredients were easy to come by. Saskatoons grew in the bush, rhubarb grew in every Mennonite garden, and even some varieties of apples could be grown locally. Flour from prairie-grown wheat, and lard from farm-raised pigs for the pastry. Everything was right handy.
For many of us in the present, pie still brings comfort and joy. Flaky pastry filled with delicious fruit… How can you surpass that?
At Fields, we try to capture the traditional pie. We make our own pastry with a recipe from my Great Uncle’s daughter-in-law, we fill our pies with real fruit, (no bought fillings) and crimp them by hand with love!
Included in each box are detailed baking instructions from my mom, who got them from my Great Aunt.
If you feel to tweak the baking time based on your oven or your taste, please do! But we will always print the instructions just like this because we dare not change a tradition!
